Nourishing Noodle Soup

A chicken soup elixir to restore inner comfort and care


6 servings


Gather:

3 - 32 oz. Chicken Stock or Bone Broth

7 Celery stalks- with leafy heads

7 Carrots

I Fennel bulb and fronds

2-3 Parsnips

2 Onions

¼ t. Turmeric

Bunch of parsley (1/4 cup, chopped)

Bunch of dill (1/4 cup, chopped)


4 -6 Organic Chicken breasts (depends on size)


½ bag of Old-Fashioned Wide Egg Noodles (I like Mrs. Millers)


Engage:

Season chicken breasts with salt and pepper. Place in 350-degree oven till breasts cooked through, and juices clear, about 22-28 minutes.


Add all stock/broth to large soup pot. Wash all veggies and herbs. Add 1 whole leafy stalk of celery, 1 whole fennel stalk with frond, 1 stem of parsley and of several stems of dill, 2 whole carrots (they don’t need to be peeled) into stock pot. Bring to a boil and keep on simmer, add turmeric and season with salt and pepper.


Meanwhile, peel and slice parsnips to half-moons; add to stock pot.

Peel and slice remaining 6 carrots to medium-thin coins; add to stock pot.

Peel and slice onions in half to thin, half-moon slices; add to stock pot.

Slice remaining 6 celery stalks, on diagonal, to medium thin slices. I like to chop included celery leaves too as they enhance flavors and aromatics. Add to stock pot.

Slice fennel bulb to thin, half-moon thin slices; add to stock pot.


Once cooled enough to handle, pull chicken breasts by hand to strips (versus slicing with a knife) and set aside.


Remove whole celery and carrot stalk and fennel stalk. Remove whole parsley and dill stems. Thank them for adding extra nutrients and flavor to the development of your broth.


Maintain a rolling simmer, add wide egg noodles, and continue to stir as they cook till just al dente.


Turn soup down to low. Add chicken, chopped parsley and dill.

Ladle your love, bowl by bowl. Sip, savor and satiate to healthy wellbeing!

I always like to reserve one serving to the freezer for a time I may need it most. Or... have a care package item on the ready that I can deliver to a loved one paired with homemade applesauce/ homemade cinnamon Bitsy bread (alongside a scrumptious throw blanket, devotion/inspirational writing, quality dark chocolate) that I can create a basket of all things to ‘ingest’ that blanket soothing comfort.
