June’s Citrus Sunset Salad

I’ve literally eaten this salad every day for lunch this month. I think what holds for satisfaction is the ‘perfect storm’ of produce that awakens nearly all receptors of my taste buds. These collection of flavors balances like a seesaw of sweet and tart. Our taste sensors are also offering input as this salad positions, conscious and unconscious communication, on high. The mind and body interplay all we are eating as it guides our behavior and digestion as well as physiological and metabolic processes that can signal a robust absorption of nutrients. This savory salad becomes more than a craving as the body knows all is being offered for wholesomeness. A beneficial range of flavors and textures influence internal messages as all simply dances on my palate.


Citrus Sunset Salad:

Bed of arugula

1 pink grapefruit, sectioned

1 cup of diced celery (leaves and stems)

A healthy handful of 2-3 mint sprigs; julienned

1 navel orange, sectioned

Rose-Vinaigrette dressing:

¼ part red wine vinegar

¼ part rose vinegar (adds a floral note)

½ part sunflower oil

pinch of sea salt and black pepper

½ t. agave

½ t. each of dried basil and dried oregano

(emulsify all in a blender)
