Farro Salad with Arugula, Peaches, Manchego and Candied Pecans
Serves 4, designed to serve at room temperature
This vegetarian side dish distributes the balance of it all; textures, flavors, and tastes (ie. The arugula’s peppery forward levels out to the subtle texture of the farro and peaches, the sweetness of the pecans and peaches is neutralized by the salty and sharpness of the cheese). I present most of my sides/salad dishes in this deconstructed form, plated like an artist’s palette. This works wonderful when entertaining as guests can easily plate just the elements that befit their preferences.
4 cups rinsed, cooked and cooled farro or bulgur wheat
4 heaping cups, washed arugula or rocket
4 ripe peaches, sliced
1 cup candied pecans
6 oz. sliced Manchego cheese
